Double Cheese Pizza recipe

INGREDIENTS:

For Base:

  • Bread flour (or) All purpose flour - 1 1/4 cup
  • Salt - 1/4 teaspoon
  • Brown sugar - 1/4 teaspoon
  • Baking soda - 1/4 teaspoon
  • Water - 1/2 cup
  • Yeast - 1 1/2 teaspoon
  • Oil - 1/2 tablespoon

For Sauce:

  • Tomato - 1
  • Onion - 1/2
  • Garlic - 5 pods
  • Carrot - 1/2
  • Salt to taste
  • Water - 1/4 cup
  • Red bell pepper - 1
  • Dry basil leaves - 1 tablespoon
  • Dry oregano leaves - 1 tablespoon

For Topping:

  • Mozzarella cheese - 1 cup
  • Cheddar cheese - 1 cup
  • Oil
  • Parmesan cheese
  • Crushed red pepper

PREPARATION:

Sauce:

  1. Wash and peel the onion. Chop the onion coarsely.
  2. Cut the tomato onto half. Peel the garlic. Wash and peel the carrot and cut into pieces. Wash and cut bell pepper into small pieces.
  3. Drop these vegetables in a pressure cooker. Pour water and pressure cook for 4 whistles.
  4. Turn off the stove and let it cool.
  5. Transfer to a mixer or blender and puree it.
  6. Transfer to a bowl. Add the dry basil leaves and oregano leaves. Add salt to taste and mix well and keep aside.

Base:

  1. Mix the yeast in lukewarm water.
    Keep aside for 5 minutes to make it bubbly.
  2. Take 1 cup flour in a bowl.
  3. Add salt, brown sugar, baking soda, oil and the water mixed with yeast.
    Knead well and make a ball of dough.
    It would be little sticky.
  4. Sprinkle dry flour on the working surface.
  5. Dip your finger tips in oil and transfer the dough to the working surface.
    Knead the dough into a smooth ball.
  6. Transfer to a greased bowl
    and cover with a plastic wrap.
  7. Keep in a warm place for 2 hours until the dough rises.
  8. Grease a flat round baking pan.
  9. Sprinkle dry flour on the working surface.
    Transfer the dough to the working surface.
    Flatten it.
  10. Take it gently and place it on the greased baking pan.
  11. Spread oil on the flattened base.
  12. Scoop the sauce with a spoon and place in the center and spread over the base gently.
  13. Spread 3/4 of the mozzarella cheese over the sauce.
  14. Top it with cheddar cheese
    and then with the remaining mozzarella cheese.
  15. Bake for 18 minutes in a preheated oven at 425 degree F.
  16. Remove from oven and cut it into pieces when hot.
    Sprinkle Parmesan cheese and crushed red pepper (optional).
