INGREDIENTS:
- Chick peas - 1/2 cup
- Lemon juice - 1/4 cup
- Tahini sauce (sesame seed paste) - 3 tbsp
- Olive oil - 1/4 cup
- Cayenne pepper - 2 tbsp
- Water - 1 1/2 cup
- Salt to taste
PREPARATION:
- Soak the chick peas in water overnight.
- Wash and pressure cook it by pouring 1 1/2 cup water and adding salt to taste.
- The chick peas should be very soft.
- Grind the chick peas in a blender by adding the lemon juice gradually. Add the tahini sauce and grind into a fine paste.
- Transfer to a bowl and add the half the olive oil and mix well.
- Transfer to a container.
- Sprinkle the cayenne pepper and pour little oil on top. Refrigerate and use when needed. Can be used as a dip for vegetables, bread and also as spread for pita pocket.
